Gluten Free/paleo Banana and Chocolate bread


Ingredients:


2 Cups almond flour

¼ cup tapioca flour

1 tsp baking soda

¼ tsp salt

3 Small extra ripe bananas

3 tbs honey

2 large eggs

2 tbs coconut oil

1 tsp vanilla extract

1/3 cup mini chocolate chips plus extra for topping


Instructions:

Preheat oven to 360 “F (180 Celsius) and set aside a medium loaf pan (8 x 4) with parchment paper wrapped inside.

In medium bowl add almond flour, tapioca flour, baking soda and salt

In a large bowl whisk together mashed bananas, honey, then whisk in eggs, coconut oil and vanilla extract until smooth.


Pour dry ingredients into large bowl of wet ingredients and mix well with spatula.

Add some chocolate chips (optional)

Pour batter into prepared loaf pan, topping with chocolate chips.


Bake banana bread for about 40/45 minutes. Check once in a while, if the top browns too fast, cover top with foil and keep baking! My oven seemed to be fine without…

Check after 35/40 minutes with a fork... if it comes out clean the bread is ready!

Let it sit and cool of for 20 minutes….slice and ENJOY!!


PS. You can freeze some slices for breakfast on other days!
